A commercial kitchen on Robson Street in downtown Vancouver called TechVill about a Frymaster FPPH355CSC gas fryer that was smoking and leaking during service hours. A commercial fryer should never smoke — smoke means contamination at best and combustion where it doesn’t belong at worst. The unit is the far-left fryer in a battery — the standard configuration in a high-volume commercial kitchen. From the front, nothing looks wrong. The problem lived behind the panels.

Before any diagnosis could happen, the machine had to be excavated. Years of oil and grease had polymerized over the frame until panels and components were physically stuck together. Several hours of the five-hour visit went into deep cleaning — not as a courtesy, but because no component could be inspected or tested until the technicians could reach it.

With the burner area exposed, the source of the smoke became obvious: the entire burner insulation kit was saturated with oil and showed burn evidence — the insulation itself had become fuel, igniting during normal fryer operation. In a packed downtown dining district, that’s an active fire hazard, not a maintenance item.

The technicians removed as much damaged insulation as could safely come out and then ran the other half of the customer’s complaint to ground: every gas joint was checked, and no gas leaks were found. The “leak” had been oil seeping from the saturated insulation — bad, but not the catastrophic kind.

Partial removal wasn’t enough — residual saturated insulation kept smouldering, confirming the full kit must be replaced. The quoted repair uses the OEM Frymaster burner insulation kit (part #8260931, full-vat high-efficiency gas configuration) and includes a detail most appliance shops can’t offer in-house: a thick gas line blocks the burner assembly, so the repair requires a qualified specialty gas technician to disconnect and reinstate it. That scope — roughly $2,200 including GST — was quoted in writing, with labour to be adjusted down if the work runs shorter than budgeted.
One more line from the work order worth quoting: the diagnostic visit was originally estimated at three hours and actually ran closer to four and a half.
